His style is professional, ingredient-driven, and intentional—focused on clean flavors and a high standard of preparation that elevates every dish he serves.

    Chef Ray began his career on the piers of Seattle and went on to build a respected culinary presence across the Twin Cities and beyond. He has written two books on game cookery and is known nationally for his clean flavors, attention to detail, and genuine hospitality.

    His partnership with Adam, owner of Schliesmann Estates, is built on shared values. Together, they believe that great food, warm hospitality, and a Northwoods setting create the kind of moments families remember. The menu you’re holding reflects that vision—fresh ingredients, customizable options, and a personal touch that aligns perfectly with the Schliesmann Estates experience.

    • Chef Ray will arrive on-site for your five-course private chef dinner

      • The exact day and time are confirmed during the pre-stay concierge call

    • Upon Chef’s arrival:

      • Chef Ray and team will fully stage the Nick Lake Lodge Coach House for dinner service

      • Guests do not need to prepare the space in advance

    • The dining experience is paced and hosted by Chef Ray and team:

      • Dinner typically spans the evening and is designed to feel relaxed and unhurried

      • Full cleanup is handled after service

    Guests are welcome to bring additional food & beverages if desired (BYOB)

  • We’ve designed the booking process to be as seamless as possible, with support available throughout every step.

    The Booking Process:

    • Select Book Your Stay

    • Select your desired season

    • Enter your group details, including:

      • Group size

      • Pet count

    • Select Culinary All-Inclusive

      • Daily meal prep serving size

      • Plate quantity for the on-site private chef dinner

    • Reserve your week

      • Your selected week is temporarily held while you complete the remaining steps

    • Lastly, select:

      • Your exact check-in and check-out dates

      • Your complimentary welcome package

        • Choice of red wine, white wine, or a six-pack of Wisconsin’s Spotted Cow

      • Any optional add-ons you’d like to include with your package

    Exact dining details are finalized after booking so the experience can be tailored to your group.

    After Booking:

    You’ll receive a confirmation email with your stay details and invite you to a complimentary pre-stay concierge call

    • During the concierge call, we will:

      • Walk through menu options

      • Review dietary restrictions

      • Confirm serving quantities

      • Schedule your complimentary on-site family photography session

      • Answer questions and coordinate any additional reservations
